Spaghetti w/ Meat sauce

1/2 lbs bacon, chopped

2 1/2 lbs ground beef

2 cups finely chopped onion

1 cup finely chopped green pepper

6 cloves of garlic, finley chopped

3 large (28fl oz) cans of whole tomatoes

3 cans (6 oz) cans tomato paste

1 1/2 cups dry red wine (Valpolecella recommended)

5 tsp each Oregano, Basil

1 1/2 cups water

1/2 cup chopped fresh parsley

2 tsp thyme

1 bay leaf, crumbled

2 TBS salt

freshly ground pepper

How to:

fry bacon until crisp in wide pot.  Remove bacon (reserve) and all but 2 tbs of fat.  Add ground beef, cooking until brown, stir in onion, green pepper, garlic & cook for 10 minutes.  Add all 3 cans of tomatoes, breaking up whole ones with a fork or potato masher.  Add tomato paste, bacon, 1 cup of wine, 4 tsp each of oregano & basil and all remaining ingredients into sauce. Bring to a boil, reduce heat and simmer for 3 hours stiring occasionally.  10 – 15 minutes before serving add in 1/2 cup wine, and 1 tsp each oregano and basil.

Serve over favorite pasta.  Enjoy
